Homemade pizzas are a temptation to prepare when we want to treat ourselves to something special. In times of confinement, it is not uncommon that we feel like it even more because it also becomes a very entertaining activity, but no matter how homemade it is, it should not be abused.
Among the “fit” recipes for pizza at home, keto is very popular, they try to reduce carbohydrates to a minimum and replace the dough with a mixture of ingredients that dispenses with cereals or nuts. In this version, the base is basically made up of chicken breast, being, therefore, a different way of taking a good portion of protein, which we can neglect in quarantine.
The filling or toppings should not be too complicated or abundant; Instead of resorting to the typical fried tomato – whose commercial versions have too much sugar – we prefer to use a homemade ratatouille, thus including more variety of vegetables.
If we are following a very strict keto diet we can substitute the ratatouille for anchovies or ham, a tapenade of olives or, simply, more cheese, using, for example, cream base cheese.

- Chicken breast- 500 g
- Eggs M – 1
- Parmesan cheese or similar grated- 40 g
- Homemade ratatouille or cream cheese- 300 g
Mozzarella cheese- 1
- Oregano to taste
- Garlic granulated to taste
- Black pepper to taste

The easiest thing is to ask the butcher to mince the meat, although we can also do it at home. If we do not have a mincer or kitchen robot, with a good knife and patience we can obtain a more than acceptable result. For this, it is best to soften it first by hitting it with a meat hammer or rolling pin, through the plastic film.
Preheat the oven to 200ºC and prepare a large tray with non-stick baking paper. Arrange the chicken meat in a bowl, season and add the egg, cheese, and granulated garlic and oregano to taste. Mix everything well to form a kind of wet paste or dough. It is best done with the hands, using suitable gloves.
Spread on the tray leaving it as thin as possible, with the back of a large spoon. If it is very humid, pass one or two sheets of kitchen paper over it, pressing gently. Bake as is for 15-20 minutes, until golden and firm. Let cool slightly outside the oven.
Distribute a layer of ratatouille or cream cheese and add the drained and crumbled mozzarella cheese. Bake again until the cheese is well melted, about 10-15 minutes, and season with more oregano and/or garlic, if desired.
With what to accompany the keto pizza
This low carbohydrate chicken-based pizza is perfect to share between two and will leave us well satiated. Depending on our nutritional needs, we can accompany it with some vegetable food, such as a simple salad with green leaves and avocado.
